How many cases does a ton of grapes make?

About 71 cases, using the standard planning figure of 170 gallons of wine per ton of grapes and a standard case of twelve 750 ml bottles holding 2.378 gallons. That is the number to use when nothing better is available.

It is also a number that should be replaced as soon as possible. The 170 gallon figure is a planning convention, not a physical constant, and actual yields commonly run between 150 and 180 gallons per ton. At the bottom of that range a ton produces 63 cases; at the top, 76. On a 40 ton crush that spread is more than 500 cases, which is the difference between a comfortable allocation and a shortfall.

The variables that move it are mostly decided at the press. A gentle whole cluster press taking only free run and a light cut will land low. A harder press that keeps more of the press fraction will land high, at some cost in phenolic quality. Variety matters too, since thicker skinned varieties and high seed to pulp ratios return less juice per ton.

The barrel row is the one most often misused. A 225 liter barrel holds 25 cases of capacity, but it will not bottle 25 cases, because racking losses, topping additions, and the heel left at the bottom all intervene between fill and bottling.

Where does the missing volume go?

It leaves in small amounts at every step, and the total is larger than most people expect: 10 to 15 percent between the crush pad and the bottling line is routine.

The sequence is predictable. Stems come off at destemming and pomace stays behind at press. Gross lees are dropped at the first racking, fine lees at each one after. Barrels lose volume to evaporation and to absorption into new oak, then take volume back in topping, which is a transfer rather than a loss but has to be accounted somewhere. Fining and filtration each leave product in the medium and the lines. Bottling gives up a heel in the tank and a purge at the filler.

None of these is worth eliminating; they are the cost of making the wine properly. What is worth doing is measuring them. A winery that knows it loses 12 percent between press and bottle can plan a bottling run without discovering a shortfall on the day, and can tell a custom crush client what to actually expect. That requires a volume recorded at every vessel transfer, which is exactly the record that federal wine production regulations expect a bonded winery to keep anyway.

Why case counts have to become gallons

Because the federal government measures wine in gallons and a winery measures it in cases, and every compliance document lives on the gallon side of that translation. Excise tax is assessed per wine gallon. The Report of Wine Premises Operations is denominated in gallons. Bond requirements are calculated from gallons.

The conversion itself is trivial: multiply cases by 2.378. The failure mode is not the arithmetic, it is doing it separately in two places. A winery that tracks case goods in one system and reports gallons in another has two numbers that must agree and no mechanism forcing them to. They agree in January and drift by March, and the discrepancy surfaces during an audit as a difference between reported production and documented inventory.

Bottle sizes other than 750 ml complicate this further, since a case of twelve 1.5 liter magnums is 18 liters, not 9. Any winery packaging in multiple formats needs the conversion applied per format rather than per case, which is the kind of detail that survives in a system and evaporates in a spreadsheet.

What this does to cost per case

Yield is the denominator of every per case cost you calculate, so an error in yield propagates into every costing decision downstream. Fruit purchased at $2,500 per ton costs $35.21 per case at 71 cases per ton, and $39.68 per case at 63. That is $4.47 per case of pure denominator error, before a single other input is counted.

The effect compounds because most winery costs are incurred per lot rather than per case. Barrel amortization, cellar labor, lab work, and overhead allocation are all spread across whatever volume actually emerges. Assume a generous yield and every one of those per case figures is understated, which is how a wine that looked profitable at planning turns out not to be at the end of the vintage.
